Tortellini Soup

Tortellini Soup: (recipe shared by Kristen Zaks)
2 cans of chicken broth (I use Chicken Stock in the Crockpot recipe)
1 box/tray of DiGiorno cheese tortellini (from the dairy section)
1 can diced tomatoes
1 bag fresh spinach
1 can canellini or great northern beans

Parmesan cheese for garnish

Boil broth and cook tortellini in broth (about 5 min); add tomatoes, beans, and spinach.  Turn to medium and keep stirring.  Serve with Parmesan cheese.

NOTES:  It doesn't get much easier than this!  This took all of 10 minutes to prepare and was super yummy.  Great for a quick weeknight meal.  We served this as a complete meal by itself, but you could add some crusty bread to make it more filling.
