Out of the Mouths of Babes...Our Christmas Wrap Up

This past week was filled with great time with family and friends, baby showers, meeting babies, and lots of yummy food.  It was truly wonderful and truly exhausting as all of our successful family get-togethers tend to be.  Our family connected at my parents' house in Augusta.  My brother flew in from Telluride, CO which always ends up having its share of complications and showed up about 4 hours late (a success in our books.)  My sister and brother-in-law made the 12 hour car trek from NYC...by the way, she's 8 months pregnant...that is family love if I've ever seen it!  My husband drove one of the kids, and I drove with the two others, one of which screamed for literally a third of the trip, and all I could think was that I was so thankful to be in the car with a screaming baby on a 3.5 hour car trip rather than flying across country with two toddlers by myself for Christmas (which is what I did for 2 Christmases while we were in Scottsdale, AZ.)  Piece of cake!

While trying to come up with how to convey our Christmas week to you, I decided that there is no way to wrap up this week in one blog post and do it any justice.  So, I will share details of the baby showers and our menus at another time...but for now, I thought the best way to give you a glimpse into our week was "out of the mouths of babes."  Here are some sweet, funny, and truly embarrassing quotes from my 5 and 4 year old...

The first morning we were there, Henry (4,) my brother, and I were sitting at the breakfast bar, and my dad came down the stairs.  Henry turned around and greeted my dad with a deadpan, "Hi, Bill." and resumed his breakfast.

Me: "Henry, I need a hug and a kiss from you this morning."
Henry: Dramatic pause, followed by a kiss on a the hand, then, "Yes, Your Majesty."  Again, deadpan.

Me:  "George (5,) is Clara asleep in the back seat?"
George: "Yes."
Me: "She is?"
George: "Oh wait, no.  No, she's not asleep.  BRAIN, START WORKING!"

Me: "Henry, how did you like that party?"
Henry: Sigh, "It was so loud and so much music that I just couldn't hear myself."

George to Henry, "Henry, I love you, but you are wearing me out!"

George: "Mom, I have a secret to tell you.  I love you so much.  Being with you is the BEST day."
(kid knows how to work it at bedtime.)

Henry: (at the same bedtime) "Mom, I think my bottom is trying to tell me I need to go poo poo!"
Henry: (five minutes later) "Mama, I can't get this big poo poo out.  I think it's really STRONG!"

George:  (forty minutes into the same bedtime) "Mom, do you know what the best Christmas present is?  Our family!"

Henry: "I love baby (what he calls Clara,) and the best Christmas present is going to bed."

AND THE KICKER AT CHRISTMAS EVE CHURCH:
Let me set the scene for you...all was going swimmingly...we dressed for church an hour early and had plenty of time for some lovely photos, got to church in plenty of time to drop Clara in the nursery (she didn't even cry!) and had great seats in church that allowed the boys to actually see and hear what was going on.  About 45 minutes into the service, Henry was really squirmy so I started whispering to him explaining to him what the music and the lessons were all about.  He was listening pretty well then all of a sudden turns to me at full volume during one of the prayers and announces: "MOM!  Your breath stinks!"  SERIOUSLY?  That's what you're going to announce to the entire First Baptist Church???  I mean, my throat hurt all week, and yes, maybe, but REALLY??? it couldn't have been THAT bad!  Well, what can you do but keep your head down and continue praying, right?  Right...except for if you're my sister, who swung around with her mouth agape, hysterically laughing and who continued to do the silent laugh with her shoulders bouncing up and down for the remainder of the service.  All I have to say is that it's a good thing we weren't sitting next to each other or we would've never pulled it together.  Well, there went the reverence of Christmas Eve.  Oh, Henry, you always keep us on our toes!!!

Dinners Week 14: Holiday Crowd Pleasers, Breakfast Casseroles, Pizza Casseroles, Chili, Butternut Squash Tortellini

Pizza Casserole: (recipe from Lindsay Russell)


1 medium onion, finely chopped
1/3 cup butter
2 cups uncooked rotini pasta (it didn't specify how much or what kind of pasta, but this is what I did.)
8 oz can and 15 oz can tomato sauce
4 oz sliced pepperoni (I used turkey pepperoni)
1 cup grated Swiss cheese
1 pound grated or sliced Mozzarella cheese
4 oz can sliced mushrooms
1/2 t oregano
1/2 t basil

Saute and reserve onion.  Melt butter and pour into 9x13 glass pan.  Cook noodles and drain.  Toss cooked noodles in butter until coated.  Cover with 15 oz tomato sauce.  Layer 1/2 pepperoni, 1/2 mozzarella, 1/2 Swiss, all onions and all mushrooms over top.  Sprinkle with oregano and basil.  Layer with remaining 8 oz tomato sauce, pepperoni, and Swiss.  Put remaining mozzarella on top and bake at 350 degrees until bubbly (about 45 minutes.)

NOTES:  My family loved this.  It was basically pizza with noodles rather than dough.  It was tasty, easy, and eaten :)  This is great for a busy week and for a crowd.  Throw together a salad or some roasted broccoli or asparagus, and you've got a full meal.  




Kid-Friendly Turkey Chili: (recipe from skinnystaste.com)

NOTES: This was a big hit with all of my boys.  It is not super spicy, and it's chunky enough that they could dip their baked tortilla scoops into it like nachos.  I added sour cream to mine and ate it with the baked tortilla chips also.  Super fast, easy, and yummy!



Butternut Squash Tortellini with Brown Butter Sauce.  (recipe from foodnetwork.com, Giada de Laurentiis)

NOTES:  Oh my word.  I am not kidding when I tell you that this may be the most delicious thing that I've ever made.  It took some effort stuffing each individual wonton wrapper, but we have tons left over in the freezer for a meal that will come together in 4 minutes in the future.  What a wonderful entertaining meal for the fall/holidays.  The cranberries and walnut brown butter makes it extra special, but these ravioli/tortellini are decadently delicious all on their own.  




Sausage and Cheese Grits Casserole: (recipe from Betty Crocker)

NOTES:  This recipe takes very little time to prepare and is different than your typical egg based breakfast casserole.  I am not the hugest fan of eggs, so this is a great alternative...and a great way to introduce grits to people who have previously not cared for them or don't really know what they're supposed to taste like.  I use Wisconsin cheddar which is extra sharp and hot breakfast sausauge.  This can be easily frozen.  I will tell you that I usually end up having to cook it a little longer than it calls for.

NOTES:  This is one of my all time favorite breakfast casseroles, and it requires very little effort to put it together.  I usually throw all of the ingredients (besides those for the topping) in a huge bowl and mix them together with my hands as it's just faster and easier.  This hashbrown casserole is creamy, delicious, and great to feed a crowd.

The Calm Before the Storm

Here we are the week before Christmas, and I am feeling incredibly calm.  This week has been no less hectic that the past few, but my attitude has somehow changed.  I think that a big part of it is that I have made list upon list upon list, and I LOVE checking things off of a list.  Last week I was living by my "head calendar," as one of my friends pointed out, and I was dropping the ball left and right.

It all started Monday night at basketball practice for the boys.  I was off my game because my husband got called into an emergency at work and couldn't make it to practice (problem because he's the coach.)  We raced around as usual before practice to try and cram some food into the children...my choice of the night was lamb burgers.  One of the boys LOVED it, the other wouldn't touch it, (although he ate it and loved it the next day...hmmm) and the baby ate a few bites and then proceeded to throw the rest on the floor, which, by the way, is her new favorite game.  Once we got to practice, I know I looked like a bug whose eyes are about to pop out of its head because I was running around chasing my one year old, who only wants to be where the action is and is constantly trying to get herself nailed with a basketball, and trying to make sure the boys were where they needed to be, participating, etc.  The five year old was fine, and the parents were awesome to pick up the slack with no coach present...the four year old was a different story.  My four year old lives with his head in the clouds and has the greatest imagination.  He doesn't actually "play" basketball, but he "pretends to play" basketball.  He has his own role plays going on in his head with coaches, refs, other players, etc, and it usually doesn't really match up with what his coach is actually trying to get him to do.  It is really funny to watch, actually, but I am trying to find the balance in letting his imagination run wild and in getting him to follow the "rules."  He's four, I think we're fine...right?

Tuesday, I needed a do-over.  I forgot to drop off a friend's stroller for her new baby.  I forgot my child's diaper bag when I dropped her off in the nursery before Bible study.  I forgot to do prayer requests at Bible study (how can you forget that?!?!?)  I forgot that I had signed up to be the mystery guest reader in my four-year old's class.  Luckily his brilliant teacher emailed me that morning and I happened to check it as I was leaving Bible study.  I made it 2 minutes late...with no book...and no entertainment for the one year old.  It was a special special day to say the least.  This is the day that my friend used the term "head calendar," and that spoke directly to how I was living last week.  I quickly added a 2014 planner to my Christmas wish list.  That night, I made a delicious and beautiful meal, gnocchi with spinach cream sauce.  It was so so yummy, but dinner was not so delightful.  The kids didn't like the pasta (I think it was the green,) and everyone was in melt down mode.  I posted a picture of our table with the baby screaming, one child standing in his chair, and the other child drinking his milk which he proceeded to dump on the floor right after I took the picture.  All we could do was hysterically laugh because it was just such an appropriate ending to the day. 

Wednesday, I decided I needed to get it together and make a plan...and when I say make a plan, I mean plan a cookie decorating party for 20ish kids.  We'll return to that in a bit.  Wednesday nights are always a bit of a disaster around here.  My mom used to say that she would "lose her religion on the way to church."  Well, that's what Wednesdays sometimes feel like for us.  The boys have choir and chimes, and we eat dinner at church.  My kids LOVE eating with their friends, and I love that they are excited about going to church.  BUT, it is always a late night, and everyone is usually crying on the way home, which makes bedtime pretty painful.  This is why we have decided to make Wednesday nights our date night in...we need it after the whirlwind of our evening.  I have talked about date nights in before, but I would highly recommend them once again.  It makes an ordinary night a little special, which is what each of us needs every once in a while.

Thursday was a breeze...I got my haircut, I visited a friend and her new baby, I made a kid-friendly dinner of chicken cordon bleu, and my best friend and her kiddos came over for a playdate and stayed for an impromptu dinner.  It was lovely.  ALL five children ate all of their food, and my friend and I got to enjoy each other's company while our hubbies worked late.  I must've needed some calm before the storm on Friday...which leads us to the oh so crazy and oh so fabulous Christmas Cookie Decorating Party...

My four year old had been begging me to decorate cookies, and I had put him off all week.  So, I decided it would be fun to have a few friends over to join us.  I was already planning on helping a friend make gingerbread houses for our kindergarteners' class, so I figured my kitchen would already be in disarray.  Well, the cookie idea just snowballed, and I ended up with three banquet tables full of kids making beautiful Christmas cookies.  I kept it simple with break and bake cookies and made buttercream frosting (recipe here...I added a little extra milk so that the consistency was a little more runny.)  I covered the tables with craft paper and bought condiment bottles from Michaels to put the frosting in.  We laid out 3 colors of frosting and several bottles of sprinkles on each table and let the kids go nuts.  It was WILD, and the kids had a blast.  We still have no rugs in our house, so I figured now was a great time to do this party and not stress out about having sugar in all forms all over my floors.  I learned a few things in the process...sprinkles are pretty but kind of a bad idea (I am still finding and stepping on them.)  Next time, I will use bigger candies and bigger cookies.  I will give the girls 2 cookies and the boys 5, and it will take them the same amount of time to decorate them ;)  The girls really were amazing with their exquisitely decorated cookies, and the boys pretty much dumped a bunch of icing and at least half a bottle of sprinkles on their cookies and called it a
day.  Luckily the weather was nice so that they could go burn off some energy after the sugar high!!  That night, we ordered pizza.

Saturday night was a holiday block party and an impromptu date night out...gasp, I know!

It's the MOST Wonderful Time of the Year...and a GREAT time to save time and money!

Okay, so after last week's crazy, this week has been much more manageable.  I have loved slowing down a little bit and enjoying the holidays.  As suspected, the decorations are up, most of the Christmas shopping is done, my Christmas cards are addressed and ready to be mailed tomorrow, and the laundry is done...for today.

I have decided to share a few little nuggets that I have found helpful when trying to maximize time and money...especially during this busy time of year.

Lowe's Foods To Go Express:
I have long been a fan of Harris Teeter's Online Shopping, and this week I tried out Lowe's Foods To Go.  They are essentially the same process; however, Lowe's has an express service that allows you to purchase 15 items or less, and they will be ready in under an hour!  The cost of this service is only $2...you can usually make that up in coupons!!  It was a big help this week when I ran out of baby wipes, milk, and baby food pouches at the same time, and it was POURING down rain and freezing outside.  LOVE this service and would highly recommend it for those of you in Winston.  For those not in Winston, any grocery delivery or pick up service is so worth the money and your time!!

Meringue Icing
Growing up, my brother, sister, and I would all make gingerbread houses with our mama every year.  Back in those days, we were allowed to bring them in to share with our classes during the Christmas season, and we all got to eat the candy on the last day of school before the holidays.  Any of you EDS or Forest Hills people remember this???  I have the most wonderful memories of this tradition.  The memory that sticks out in my mind the most is the year that the icing exploded all over the kitchen.  If any of you have ever worked with Royal Icing, you know that it is essentially like glue, and it literally STUCK all over our kitchen.  My mom just started dying laughing as did we!  Well, two other moms and I have been charged with putting together gingerbread houses for our kindergarteners' class this year.  The suggestion was to use super glue to glue graham crackers onto milk cartons.  We decided to use icing, and when I asked my mom for the Royal Icing recipe, she turned me onto Meringue Powder.  This stuff is amazing!  SO much easier than beating all of those eggs...3 ingredients and you're done!  I ordered it from Amazon while waiting in line for my dry cleaning two days ago, and today it is here...which brings me to my next favorite thing...

This is one of my favorite processes!  You can literally order almost anything you could ever possibly need, and it arrives at your house within two days.  There is a cost involved, but it is quickly recovered by not paying for shipping.  If you haven't tried it, do it!  I buy everything from diapers to meringue powder to Christmas presents to ski gear on this site.  The only problem is that it makes making purchases WAY too easy ;)

So, this is a new thing that I have discovered...you can order items from Walmart.com, and if you spend $49, they will deliver everything right to your door for FREE!  No more fighting the parking lot and the people and the madness that is involved with a trip to Walmart...I mean, really, who doesn't spend $49 every single time you visit Walmart or Target????  I have started purchasing all of my bulk paper items, baby items, etc. from this site, and it has changed my life!!

Homemade Laundry Detergent
This is just about the easiest thing to make in the world.  All you need is a bar of soap (I use Ivory,) a cup of Borax, and a cup of Arm and Hammer Washing Soap.  You can either grate the soap and mix the ingredients together or chop it together in your food processor.  I can make about 6 batches of laundry detergent for approximately $20!!  Seriously!  It works well, and it is safe for top and front end loaders.  Here is one method you can use from wellnessmama.com:  Homemade Laundry Detergent

Okay, seriously, do not EVER purchase anything online without searching for a coupon code.  Most websites will offer deals on their home page and mention promo codes to use at checkout.  I have searched many sites over the years always looking for the best bargains. (Ask my sister...it's sort of a game that I have going with myself.)  The best site that I have found is RetailMeNot.com.  It is easy to navigate, easy to search, and there's an app you can use as well.  I should have kept track of how much I have saved over the years by using this website.  Amazing!

Taming Hurricane Amy

Ahhhh, the week after Thanksgiving...I am CRAZY this week...and I think most everyone I know has been too.  Is it because there are only 3 weeks between Thanksgiving and Christmas this year?  Is it because we live in a new house?  Is it because I have a one year old and not a newborn this year?  I have done zero Christmas shopping, my house is half decorated, my Christmas cards JUST got ordered yesterday, and I still haven't finished all of my laundry that piled up last weekend!

I have been running around like Hurricane Amy this week, and driving everyone around me (including myself) nuts.  TRUTH...ask my friends, my husband and my mom!  Today I decided to take a break from my life and go get my nails done and have lunch with a friend.  Does it really take so little to change my attitude and get me back on course remembering what this season is all about?  Truly a little time for myself has made me calmer, more reflective, and more thankful than I have been all week.

There are so many blessings right in front of me that I often overlook in the midst of the chaos of my every day.  I'll just mention a few as I reflect on last week.  I had all of my immediate family here for Thanksgiving...the ages spanned from 1 to 87...blessing.  Actually there's one younger than 1 that's scheduled to arrive in February...blessing.  My sister (7 months pregnant) and brother-in-law drove over 9 hours to come visit us for just a couple of days...and my brother flew across the country encountering way too many delays to see us for the same amount of time...blessing.  They could've easily decided to go their own ways for Thanksgiving as, as mentioned before, Christmas is only 3 weeks away...blessing.  Thanksgiving evening was spent with my husband, my kids, my mom and dad, and my grandmother all together in the kitchen having a pizza party and a dance party while the pizzas baked...blessing.  The weather on Saturday (when we actually celebrated Thanksgiving all together) was gorgeous and perfect for a 10ish mile run with my brother and for frying our turkey...blessing.  No one got burned or injured during the cooking festivities despite my middle child trying to jump over the hook up from the turkey fryer to the gas...BLESSING!

I could go on and on, and I often get so caught up in the details of the day that I forget to enjoy all of the amazing moments that occur.  I am involved with a Bible study right now called The Christ Centered Woman that has been such a good reminder of where my focus should remain.  The premise is that if we make our decisions based on Christ being the center of our lives that our lives will be more balanced.  Why is it that the time leading up to Christmas is usually when most of us lose sight of this?  Logic tells us that if we're celebrating Christmas that our focus should naturally be on Christ, but it is so often not the case.  There is so much talk of Santa and the Elf on the Shelf and good behavior and threats to not get presents, etc, etc, etc.

I am trying to make the effort to be more intentional about talking about baby Jesus and the story of Christmas with my children not only for their little ears but for mine too.  I have decorated my mantle not with my normal candles, stocking holders, and ornaments; I have instead decorated with three homemade nativities by my children, one that was my grandmothers, one that we got as a wedding shower gift, and one that was given to my children by their grandparents.  This is the focal point of the room, and I am hopeful that this will help my focus remain where it needs to be and keep Hurricane Amy at bay.  (We can only hope!!)  The shopping will get done (it always does, and there are always way too many gifts under the tree,) the house will get decorated, my Christmas cards will get mailed, and my laundry will get finished...well, that never really actually happens, but you catch my drift.  So I'm going to take a deep breath, make time for myself, and remember the Reason for the Season!

Dinners Week 10: Lots of Doggone Good! recipes plus a soup for leftover turkey

Slow Cooker Pork Chops with Mushroom Gravy:
recipe shared with me by Erin Bonsall from the blog, Just Cooking found HERE

NOTES:  I browned the pork chops and follow the recipe to get them in the crockpot around 10:30 this morning while all the kids were in school.  This gave me plenty of time to cook the pork chops on low in the crockpot and have dinner ready by 5:30.  My chops were pretty thin, so next time I will probably use a thicker cut as they were falling apart...really tasty, but I may have liked a little more bite to them.  I also originally thought that the next time I made them, I would probably make my own gravy with flour, butter, milk, and fresh mushrooms rather than the cream of mushroom soup, but once it was finished cooking, the gravy was actually delicious! 

SERVE WITH: 
Mashed Potatoes:
6 medium russet potatoes, peeled and diced
1/2 to 1 stick butter
1/2 to 1 8oz bar of cream cheese (I use low fat)
salt and pepper to taste
Boil diced potatoes in about 1 quart of water until fork tender.  Drain.  Add butter and cream cheese and whip with a hand held mixer.  Add salt & pepper to taste and whip again.
NOTES:  Again, I am sure that you know how to make mashed potatoes, but this is my favorite, simple method.  Mashed potatoes are really quick to put together if you cut the potatoes small enough.  Really, just add whatever you like on a baked potato to the boiled potatoes, mash them up, and you'll have a delicious side dish.  

Asparagus-Mushroom Dish (recipe from Doggone Good, submitted by Judy Goodson.)
1 1/2 to 2 lbs fresh asparagus, trimmed
1 c fresh mushrooms, sliced (I used baby bellas)
1/2 c corn oil (I substituted vegetable oil)
1/4 c white wine vinegar
1/4 c sliced green onions
2 T chopped parsley
1 tsp dried basil
1/4 tsp salt
In a large skillet in a small amount of boiling water, cook asparagus 4 to 5 minutes.  Drain.  Arrange asparagus and mushrooms in the bottom of a casserole dish.  In a jar, shake all other ingredients together.  Pour over the asparagus and mushroom mixture.  Cover and refrigerate for several hours or overnight. 
NOTES:  I made the asparagus and mushroom dish this morning as well.  It was super easy, and I was not convinced that this was going to be super tasty because it seemed really simple.  Well, it WAS super tasty and a great alternative to my usual side of roasted asparagus or broccoli.  The mushroom flavor really enhanced the asparagus.  My husband LOVED it!!  You do have to let it sit, though, so make it either early in the morning or the night before.  I tried to get my children to eat it, and they took a few bites but were not huge fans. 



Slow Cooker Tortellini Soup (recipe from Doggone Good! submitted by Kristen Zaks)
2 14.5oz cans Italian-style stewed tomatoes
3 c water
2 c frozen cut green beans or Italian green beans
1 10.5oz can condensed French onion soup
8oz smoked turkey sausage, halved lengthwise and cut into 1/2 inch pieces
2 c packaged coleslaw mix
1 9oz packaged refrigerated cheese-filled tortellini
Shaved Parmesan
In a 4 or 5 quart slow cooker, combined undrained tomatoes, water, frozen green beans, onion soup, and turkey sausage.  Cover and cook on low-heat for 8-10 hours or high-heat for 4-5 hours.  If using low-heat, turn to high-heat.  Stir in cole slaw and tortellini.  Cover and cook for 15 minutes more.  Top each serving with Parmesan cheese as desired.  Makes 10-12 servings.

NOTES:  This was so easy and such a hearty, wintertime soup.  I made this for me and my husband and took half to a friend as I wasn't certain that the textures of this soup would work for my kiddos...and honestly, I didn't feel like testing those waters that night ;)  They had leftover pizza!



Pecan Crusted Tilapia: (recipe from Doggone Good! submitted by Anne Dunn)
1/2 c dry breadcrumbs
2 T finely chopped pecans
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp black pepper
1/2 c low-fat buttermilk
1/2 tsp hot sauce (or more to taste)
3 T all-purpose flour
4 tilapia fillets
1 T vegetable oil, divided
4 lemon wedges

Combine breadcrumbs, pecans, salt, garlic powder, and pepper in a shallow dish.  Combine buttermilk and hot sauce in another dish.  Place flour in a third dish.  Dredge 1 fillet in flour, dip in buttermilk mixture, and dredge in breadcrumb mixture.  Repeat procedure for remaining fillets.  Heat 1 1/2 tsp oil in a large nonstick skillet over medium-high heat.  Add 2 fillets, cook 3 minutes on each side or until fish flakes easily when tested with fork.  Repeat procedure with remaining oil and fillets.  Serve with lemon wedges.

NOTES:  This was a HUGE hit at my house.  I do not love fish, so I don't cook a lot of it, but even I thought this was delicious!  The baby ate some, the boys gobbled it down, and George LOVED every bite of it.  This came together really quickly and was very fast to cook...perfect meal before the Wake Forest basketball game!

SERVE WITH:  Edamame and
Cheese Grits Casserole: (recipe from Doggone Good! submitted by Colby Murphy)
3 c water
1 c quick grits
2 c shredded cheddar cheese
3/4 c evaporated milk
1/3 c butter
2 eggs, lightly beaten
12 shakes Texas Pete
1/8 tsp black pepper

Preheat oven to 375 degrees.  Cook quick grits according to the package.  Add 1 1/2 cups cheese, evaporated milk, and butter.  Stir until melted.  Add eggs, hot sauce, and pepper.  Spray an 8x8 inch baking dish with cooking spray and pour in the grits.  Top with remaining 1/2 cup of cheese.  Bake for 40-45 minutes.

NOTES:  This was the perfect accompaniment to the tilapia.  Maybe it's from living in Charleston, but I always want to pair fish with grits.  I didn't fully read the recipe and ended up dumping all of the cheese in, and it was still so so yummy!  Again, this came together super fast, and this dinner was a great, semi-fancy meal (at least in this house!) for a busy weeknight.



Chicken and Wild Rice Soup: recipe from Susan Lawson
6 TBSP margarine (I use butter)
4 TBSP flour
2 cups Half and Half (I use fat free)
3 cups chicken broth
2 cups cooked and diced chicken (cook in the crockpot)
Canned mushrooms
½ cup onion, chopped
½ cup celery, chopped
1 ½ cups cooked wild rice
Thinly blanched sliced carrots (I used about 1/2 cup)
Salt and pepper

In large pot, melt margarine.  Blend in flour and cook 2 minutes without browning.  Slowly add Half and Half and 1 cup chicken broth, whisk constantly.  Bring to a boil and cook a few minutes.  Add remaining broth, chicken, onion, celery, mushrooms, carrots and wild rice.  Season with salt and pepper.  Simmer 30-60 minutes.

NOTES: I think this would work great with leftover turkey from Thanksgiving!  My mother in law made this for my mama a few years ago when she had pretty major surgery, and it quickly became my mom's favorite meal!  This is a hearty soup perfect for a cold day.  It's really easy to make and comes together quickly.  I threw the chicken in the crockpot and chopped the veggies early in the morning and finished the soup in about 10 minutes (up until the simmering part) later that day.  YUM!
